Since iOS 11, iPhone shoots video in HEVC (H.265) by default. The reason is simple: HEVC is roughly 40-50% more efficient than the older H.264 codec, meaning the same quality video takes about half the storage. With 4K HDR footage chewing through gigabytes, that efficiency matters.
The tradeoff is compatibility. HEVC is well-supported on Apple devices, modern Android, and recent Windows, but it's not universal. New videos will record as H.264 MP4 (well, MOV with H.264) instead of HEVC. They'll be larger for the same quality, but they'll play anywhere without conversion.

In practice this is flaky. It sometimes works for AirDrop to a Mac, but export to Files, third-party apps, or share sheets often still produce HEVC. If you really need MP4 output every time, don't rely on Automatic — convert explicitly.
